1 cup Cashew Rendezvous SustainaButter
2 eggs
1/2 cup Truvia Sugar
1 tsp vanilla extract
1 tsp baking soda
3/4 cup dried goji berries
Preheat oven to 350°. Place the racks on the lower and upper third of the oven.
In a medium sized bowl, mix the SustainaButter, eggs, sugar, vanilla, and baking soda together.
Fold in the goji berries.
Scoop 1-2 tbsp of the dough into balls and place them at least one inch apart on ungreased baking sheet. Flatten the balls into desired cookie shapes.
Bake for about 10 min. starting on the bottom rack, switching to the top rack halfway through, until the edges turn golden.
Place on racks to cool, and repeat with the remaining dough.
2 large sweet potato
3/4 cup coconut milk
1/2 cup Pecan or Pumpkin Pie SustainaButter
2 slices of bacon, chopped
1/4 cup Cocunut nectar
2 tbsp Coconut oil
Skin and chop up the sweet potatoes into cubes.
Bring a large pot of water to boil, then boil the potatoes for about 20 minutes, until soft.
Meanwhile, cook the chopped bacon in a frying pan until crispy.
Drain sweet potatoes and place in a large bowl, or electric mixer bowl.
Mash the potatoes with a hand mixer, or on low with an electric mixer.
Add the coconut oil, coconut nectar, and coconut milk until you achieve the desired texture.
Add the bacon and the Sustainabutter, I find either the Pecan Keeping On, or the Pumpkin Pie flavors work great.
Sprinkle with salt and pepper, or other seasonings, and serve.
